I made marmalade about five months ago and it wasn’t very successful (see pic).
The rind floated to the top and the consistency was like watery gravy. Not great.
Then somebody told me marmalade is really best made with Seville oranges, a bitter orange only available around January/February. So to beat the ‘January blues’ I thought I’d give it a go.
